Probably I don’t understand the question correctly. A coach doesn’t see anything else than you looking at your data.
So of course you could coach yourself. Build a training plan and drag it to your calendar. Do the workouts and watch your progress …

Building a training plan for your specific goals is a great experience to learn and take more control over your training. This comment is not the best place to get into the specifics of what a proper training plan looks like for you, but there are some phenomenal resources out there. My personal favorites are Joe Friel’s Cyclist’s Training Bible, and the TrainerRoad blog posts among others.
Once you have a solid, progression-based foundation, this is the best resource for understanding how to build your workouts into Intervals: Workout builder - Guide - Intervals.icu Forum
After that, all you have to do is the easy work of the actual training and the perpetual dive deeper into more and more obscure training material - simple!
