I usually do 1 workout per week with intervals at a certain % of incline on the treadmill (for example 6x 4min@11% + 2min@2%). Is it possible to edit the data when the workout is done to put the elevation on certains intervals or for the time being I just can put the total elevation of the workout?

You can edit the total elevation gain with the Climbing field.
There’s no possibility to do this per interval because there’s no elevation stream.
I do this via using the (free) Runcline app for the workout. Not infallible but generally the inclines work. You can programme the workout in a similar way to Intervals, though must be done within the app. I think the QZ app would allow this also. Both can work with Zwift with auto incline in some TMs & so use their workouts or your library via their platform
