it seems that a activity of my Coros watch overrides Strava data with empty data…
Can that be configured or is this a bug?

All duplicates from Strava will be overriden by the other source. Usually these sources have more data than Strava.
So, why are those Coros activities empty? If you don‘t use Coros data, then deactivate Coros download. But I would recommend to use the connection of the original data source, these should have all data.
You also can undelete the Strava activity, if you want it back.
We can‘t see your activity for privacy reasons, so best to share some screenshots, if you want to provide more information.

Makes sense to override Strava 
I have missed to add Zwift as data source.
Corus watch wasn’t paired with trainer… so just HR was synced…
