I couldn’t find the button to edit the Charts in activity, it only appears when creating a new Custom Chart or download someone else’s Charts for the first time. Can someone tell me how to find it?

Yes you can only edit custom charts. If you want to edit one of the built in ones, just create a custom chart and add the same plot.
