You can create a Workout selecting “Ride” on the day you want. Then, you can add the following information in the “Description” (see image below)
For your particular training, you can write:
The zones correspond to your Heart Rate zones. They are define in your Settings. I hope it helps.
Try landscape mode. Looks like that screen isn’t working on your phone. You can also just enter text as @KrKAlex suggested.

You need to enter a time (duration), then the OK button becomes active. Look at the red text indicating duration is empty
