Filed Intervals.icu and it shows that I was 107% of intensity, as I was going much faster than my threshold (not set for running or swimming, I must say)

Did you delete that activity? I don’t see it on your calendar.
E-bike rides will use the sport settings for “Other” with your configuration so the load is probably from the HR data. The intensity is calculated from that and the moving time.
The “Threshold: ?/km” is a bit misleading.
